A name that is already a caress.

In Sicilian dialect, fimminedda means “little woman” — a small, affectionate word, like the creature it describes. In Ganzirri, shellfish farmers have always called it this: not with its scientific name, not its commercial name. With the affectionate diminutive given to cherished things.

Small outside. Extraordinary inside.

The Fimminedda measures 2–4 centimetres — ideal size for consumption is around 3 cm. The shell is wedge-shaped, solid, grey-brownish. But it’s the inside that surprises: the open valves reveal a deep violet mother-of-pearl interior, one of the most beautiful among all Mediterranean shellfish.

The flesh is small but concentrated. Sweet, delicate, soft and juicy. It requires careful cooking — and rewards that care with a flavour that is, in all, the sea of Ganzirri distilled.

The Fimminedda lives closer to the shore than the Rizza. Rakes comb the sandy beds carefully — each specimen is delicate.

Size selection

Only specimens of ideal size (≥3 cm) are selected. Smaller ones are returned to the water to complete natural growth.

Is the Fimminedda a tellin?

Not exactly. Donax trunculus belongs to the Donacidae family, not Tellinidae. The “tellin” label is a commercial approximation.

What is the difference between Fimminedda, Rizza and Cocciula?

Three different species, three different flavours: Fimminedda is the most delicate, Rizza the most precious, Cocciula the most robust.

Is it available year-round?
